Why mL Cannot Be Directly Converted to Grams
mL = Volume
Milliliters (mL) measure volume — the amount of space a substance occupies. It tells you how much room something takes up, not how heavy it is. For example, 100 mL of feathers and 100 mL of honey both occupy the same space, but they weigh very differently.
Grams = Mass
Grams (g) measure mass — the actual weight of a substance. Mass depends on how tightly packed the molecules of that substance are. A gram of water and a gram of mercury both weigh the same, but they take up vastly different amounts of space.
Density Is Required
Density is the bridge between volume and mass. It tells you how many grams fit into one milliliter of a substance. The formula is: grams = mL × density. Without knowing the density, there is no way to accurately convert between mL and grams. Water has a density of 1.000 g/mL, so 1 mL = 1 g. But honey has a density of 1.420 g/mL, meaning 1 mL = 1.42 g.

Look up the density of your ingredient (e.g., flour is about 0.593 g/mL, sugar is about 0.845 g/mL). Then multiply your mL measurement by that density. For example, 250 mL of flour = 250 × 0.593 ≈ 148 grams.
